The name Rwcola (pronounced ROO - ko - la) is a combination of the Italian word for rocket salad, "rucola," with the Welsh style spelling. This reflects the restaurant's commitment to using both Italian and Welsh ingredients and flavours in its dishes
Matteo is the Pizza Maestro at Rwcola. He’s a certified pizza instructor at Accademia Pizzaioli and is currently studying Food Science and Nutrition. Matteo has worked in many restaurants around Europe in the past 15 years, including Italy, France, Spain, Norway, Poland and for the past 6 years, Wales. You can also find him in Scaramantica Pizzeria in Cardiff, where he is also a pizza chef. Matteo is passionate about cooking and loves to experiment with new flavours. He’s also a big fan of Welsh food and loves to incorporate Welsh ingredients into his dishes.
Rwcola’s pizzas are made with Caputo, the same flour that the best pizzerias in Italy use. Crunchy pizzas made in the classic Italian style, with only 5 simple ingredients – flour, water, olive oil, yeast and salt. The pizzas are then topped with the best quality ingredients from Wales and Italy, freshly prepared each day. You can try anything, from popular in Matteo’s hometown Zola e Parma or an unconventional BBQ Pollo, to our special Rwcola. We also offer a selection of pasta dishes based on Matteo’s family recipes and the experience gained in restaurants across Europe.
